
This is SO best, I guarantee it!
Ingredients:
1 cup quick cook oats (NOT instant!)
1/3 cup of brown sugar
1 beaten egg
1-1/2 cups whole milk
2 tablespoons butter
4 slices of bacon (I like thick cut)
In a medium sized sauce pan, combine the first four items. (if you add in the order shown, you only need one measuring cup, for easy cleanup!) Stir over medium heat until mixture thickens and begins to bubble. Turn off burner, add butter and put a lid on the pot.
Microwave the bacon until done and as soon as it's cool to the touch, break it up into bite sized pieces. Add to oatmeal and gently combine. Your butter will have melted into a small pool, so carefully mix that in too.
Serves 2.
