Honey-Apple Pork Chops By: Copper Mistral
4 Pork Chops (bone-in, boneless, butterfly, whatever) 1qt (about 1L) Apple Juice 2 Tbsp (about 30mL) Honey Ground Black Pepper
Optional: Cinnamon Nutmeg Garlic Other spices
Mix the apple juice and honey. You may need to warm the juice slightly to get the honey to blend in. Add a dash each cinnamon, nutmeg, and black pepper. Mix well. Using a meat fork, dinner fork, or other sharp pokey utensil, pierce the pork chops repeatedly. Have fun. Pretend they're your former boss or something. Place pork chops in a large (gallon sized) zipper baggy, add the apple juice-honey-spice mixture to the bag, and seal. Let marinade in refridgerator as long as possible. As with most marinades, the longer, the better. I recommend at least 4 hours, overnight seems to work best. Massage the bag occasionally to keep things in solution. Preheat BBQ grill to just below "Wow, that's hot!" (medium flame) and add pork chops. Cook 2 to 3 minutes, then lower flame. Turn once. Cook until done. Keep your eyes open for flame-ups as the juice-honey mixture is quite flammable, and left unattended, you will end up with oddly shaped hockey pucks. Alternative suggestions: Instead of using a fork to pierce the meat, use a marinade injector. I don't have one, so I've never done this. If you don't have a grill, or the weather is off, you can bake them in the oven. I have no idea how to do this, though. Check your local cook book for recommended baking temperatures and times.

I'm a great cook FYI, but its cause I follow tried and true recipes. So I dont think Betty Crocker would appreciate me posting any of her recipes in here.

Summer Squash & Pasta Bonnie Kelley
3 c. cooked bow-tie pasta 2 tbs acceptable butter 2 c. summer squash (2 medium) sliced 1 c. onion diced 1 clove garlic 2 tbs flour 1 c. 1% or 2% milk 1 c. Parmesan cheese pepper to taste.
Cook pasta according to package direction omitting salt. Meanwhile spray large skillet with non fat cooking spray, add 1 tbsp butter and melt on medium heat. Add squash, onion and garlic. Cook on medium high heat until mixture starts to caramelize, but squash is still tender-crisp. Remove mixture from pan, re-spray pan with non stick spray and add last Tbsp of butter. Add flour to pan and heat till lightly browned. Add milk, and pepper and using wire whisk, heat, stirring until thickened and no lumps. Remove from heat, add to pasta, and add in squash mixture and mix thoroughly

Dumper Pasta Sauce ( perfect every time ) 1 lb hot & sweet italian sausage 3 tbs olive oil 2 tsp finely chopped parsely 2 tsp finely chopped basil 3 clove crushed garlic 1/2 cup grated parmeasan cheese 2 large can tomato sauce 24 oz 1 large can tomato puree 24 oz 1-1/2 - 2 cans water Brown sausage in olive oil in large pot add all other ingredients before sauce gets heated and then bring to slow boil lower to a simmer & and simmer at least 1-2 hours stirring frequently eat

Crockpot Turkey Roast Dinner by Lorimae Undercroft
Notes: Measurements aren't exact for this. Just fit in what fits and save the rest to add in later during a reheat!
Other vegetables work nice too, radishes, corn, greenbeans. Pick what you like!
I don't peel the vegetables (except the onion). Just wash well and cut off any funky or leafy bits.
Substitute a beef roast for the turkey and you'll have pot roast instead. If you do beef roast instead of turkey, leave out the extra water at the end!
Supplies: 1 crock pot large enough to hold it all (I use a 4 quart) Cutting board Sharp Knife
Ingredients: Small frozen boneless turkey, thawed Potatoes Carrots Celery Onion 3 cups hot tap water 1 packet of Lipton Onion Soup Mix 2 or 3 vegetable flavored bullion cubes Extra Water if needed Pepper, Salt (before serving)
Instructions: Thaw the turkey!
Wash and chop carrots, celery, potatos Peel and chop the onion into pieces. Amount will vary depending on your crockpot size.
Mix well the hot tap water, soup mix, and bullion cubes
Spray crockpot with cooking spray!
Put the thawed turkey in the crockpot. Cram potatos down around it. Put some carrots and half the chopped onion in. Pour half the liquid mixture. Put the celery and other half of chopped onion. Pour the rest of the liquid mixture
Add water until the liquid is about 2 inches below your crockpot lid level.
Cook it on low for about 8 hours. Don't lift the lid during cooking!
Season to taste with salt and pepper before serving.

Easy Crockpot Chili by Lorimae Undercroft
Notes: Can be changed to smaller recipe, just buy 1 or 2 of everything instead of 3. Substitute whatever flavor of tomatoes and beans you like
I use Green Pepper/Onion flavored tomatoes.
Supplies: 4 quart crock pot Can opener
Ingredients 3 pounds ground beef 3 15 ounce cans of tomatos, diced 3 packets of McCormick Chili seasoning 3 15 ounce cans of Great Northern or Pinto beans Cooking spray
Instructions: Spray the crock pot with cooking spray!
Cook the ground beef, drain well (I boil it and rinse it under hot tap water.)
Put the tomatos, beans, and spice packets into the crockpot, mix well. Add the meat, mix well.
Cook on low for 8 hours. Don't lift the lid during cooking! Tastes even better after a reheat the next day.
Freeze into individual portions and thaw as needed.

5 MINUTE CHOCOLATE MUG CAKE 4 tablespoons flour 4 tablespoons sugar 2 tablespoons cocoa 1 egg 3 tablespoons milk 3 tablespoons oil 3 tablespoons chocolate chips (optional) A small splash of vanilla extract 1 large coffee mug (MicroSafe)
Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly.
Pour in the milk and oil and mix well..
Add the chocolate chips (if using) and vanilla extract, and mix again. Put your mug in the microwave and cook for 3 minutes at 1000 watts.
The cake will rise over the top of the mug, but don't be alarmed!
Allow to cool a little, and tip out onto a plate if desired. EAT ! (this can serve 2 if you want to feel slightly more virtuous).
And why is this the most dangerous cake recipe in the world? Because now we are all only 5 minutes away from chocolate cake at any time of the day or night!

Chicken Squares 2-3 boneless chicken breasts poultry seasoning (or any seasoning you like for chicken) 1pkg cream cheese, softened 2 crescent roll tubes seasoned breadcrumbs
Sprinkle chicken with seasoning. Wrap in foil (then I place on cookie sheet in case of leaks) and cook in 350 degree oven until done - 35-40 mins. Cool chicken and cut into cubes; mix with cream cheese. Take 2 crescents still together and pinch together to make one square (more like rectangle) Wrap a big spoon of the chicken mixture into the dough. Dip into breadcrumbs to cover, place on cookies sheet. Cook in 350 degree oven until done - 10-15 min. They should be browned.
Makes 8 chicken squares.
This is a comfort food at our house!

Chocolate Lava Cake
Ingredients: 1 ¼ cups granulated sugar divided ½ cup packed light brown sugar 1 cup all-purpose flour 1 ¼ cups hot water ½ cup cocoa powder divided Whipped topping (optional) 2 teaspoons baking powder ¼ teaspoon salt ½ cup milk 1/3 cup butter or margarine, melted 1 ½ teaspoon vanilla extract
o Heat oven to 350 degrees F o Stir together ¾ cup granulated sugar, flour, ¼ cup cocoa, baking powder, and salt. Stir in milk, butter and vanilla; beat until smooth. Pour batter into ungreased 9-inch baking pan. Stir together reminding ½ cup granulated sugar, brown sugar, and remaining ¼ cup cocoa; sprinkle mixture evenly over batter. Pour hot water over top. DO NOT STIR
o Bake 35-40 mins or until center is almost set. Let stand 15 minutes; spoon into dessert dishes spooning sauce from bottom of pan over top. Garnish with whip toping. o Makes 8 servings.
